Dairy production plant/milk processing machine/ milk production line machines
Milk is heated and cooled and contains sufficient fat content. Its solids are standardized in the mixing line, in which milk powder and other necessary dairy ingredients and required additives are added. The mixture must be mixed slowly and always avoid air entering the mixture.
After obtaining the mixture, remove the air, heat the mixture to 65-70 º C, and then homogenize in one or two stages at 200 / 250 bar. It was then pasteurized at 95 ° C for 300 seconds, then cooled to 4-6 ° C and stored.
Next, add the culture and condiment to the tank and stir until mixed correctly.
The mixture is pumped through a plate heat exchanger, which heats the milk to 45 º C and packs it immediately. The product is then sent to the fermentation chamber where it stays for 2.5 to 3 hours, depending on the final pH. Then, the product is quickly cooled to 15 º C by forced air in another fermentation chamber, and finally enters the final storage tank at 4 º C until it is taken out the next day.

Stir sufficiently to obtain a complete mixture (this can also be achieved by an on-line mixer)
Once obtained, stirring is stopped to allow the milk to rest during fermentation. This period of time will vary depending on the medium used - between 6 and 8 hours.
At the end of fermentation (measured by pH), the coagulant formed is gently stirred and moved to a plate cooler by a positive displacement pump with a progressive chamber for rapid cooling to 20 º C, then stored in a new tank and then transported to the packaging machine
Fruit, pulp and / or jam shall be added continuously and neatly before packaging. After packaging, put the product into one chamber and quickly cool it to 12-15 º C with forced air before entering another chamber to cool to 4 º C.
